The vineyard is 8 hectares, half of which is planted with Aglianico. The vines were planted in 2005 and 2012, there is a small part ‘Toppola’ which was planted in 1982 and 1983. The altitude is 380m, the slope faces from south to southwest. The soils are rich in sulphur with generous clay and chalk in the topsoils. The Greco vines are Guyot trained at a density of 3000 plants per hectare which yield 70 hectolitres per hectare. Ferrante sees Serrone as ‘the hooligan’, immensely talented, but unpredictable in youth and brilliant if given time to mature.\u003cbr\u003eThe harvest is by hand in the middle of October with the pick of the crop selected for this single cru wine. The grapes are ‘gently’ pressed and the free run juice inoculated with local yeasts for a temperature-controlled fermentation in steel tanks. The crop was smaller than usual, the quality excellent.  Rain during the harvest kept everyone fit, running in and out of the vineyard, the stems were a little swollen, so the bunches were all de-stemmed before a gentle pressing.  Fermentation was in temperature-controlled steel tanks using selected yeasts, the wine stayed on the lees for 9 months, in this time it went through malolactic conversion*.  The finished wine was bottle aged for 2 years in di Marzo’s ancient underground cellars.\u003cbr\u003e\u003cbr\u003eOrtale has the highest content of volcanic rock.  In Ferrante’s opinion, Ortale is ‘the dreamer’, a wine with an ethereal quality.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eArchive \u003c\/em\u003e\u003cbr\u003e\u003cem\u003e\u003cmeta charset=\"utf-8\"\u003e2019:  An intense, finely textured, bone dry white, that hints at tropical fruit, white peach and hay.
