The wine is made from a selection of the best and loosest bunches, these are carried in shallow buckets to the drying room in the attic where they are laid out on wooden slatted crates. At the end of January the grapes are crushed and fermented, they will have lost 40% of their volume during the drying period and undergone a transformation that ensures the unique bouquet and concentration of flavours. After fermentation the wine is aged for 3 years in a new 3000 litre French oak barrel, the result is stratospheric and the production is just 3000 litres a year. \u003cbr\u003eFor my taste, this is a substitute for port and is perfect after a meal with almonds and dried figs. It is excellent with very strong dishes such as rib-eye with a reduction of balsamic. It is a very steep slope at two hundred and fifty metres above sea level and the majority faces east to southeast. The soils are silt and sand with just twenty-three percent of clay. The family first rented the land from the Church and had the opportunity to buy it in 2000 – the price then was six hundred thousand euros per hectare, today it would be two million.\u003cbr\u003eThe vines Nebbiolo Lampia and Michet and are thirty years old, planted using a traditional Guyot system with a meter between each vine and almost three metres between each row (3700 vines per hectare). The grapes are picked by hand in October and travel the short distance to the winery in small plastic boxes. The bunches are immediately de-stemmed and crushed before a seven-day fermentation in temperature-controlled steel tanks which never goes over twenty six degrees. The wine is macerated for two more weeks with regular pumping over and is than racked in lined cement tanks where it undergoes a malolactic conversion. The wine is then moved into large traditional Slavonian oak casks, where it remains for two years. Colognole are in a superb position, their land is sheltered by Mount Giovi, the vineyards fall south, with views through the valley to Florence. The vineyards are surrounded by woodland which provides both biodiversity and protection.\u003c\/p\u003e\n\u003cp\u003eThe terroir is a slate like rock with negligible topsoils on the upper vineyards (650m), with galestro and white clays lower down (400m). It is great ‘dirt’ for vines, but it is the altitude that makes these wines unique, long sunny days and cold nights mean the grapes mature slowly and each berry holds its acidity and it is this balance of tannin, sugar and acidity that gives this wine such ageing potential.\u003c\/p\u003e\n\u003cp\u003eAll the work in the vineyard is manual, the vines run up and down the slope and are planted using a Guyot system, there are 15 different clones of Sangiovese planted and the Canaiolo is an old biotype from the estate. At Il Poggiolo the Annata Brunello comes first, a Riserva will only be made when a barrel or two of the best wine can be hived off with no detrimental effect. \u003cbr\u003eRegulations stipulate that a Riserva must be aged for another twelve months before release, the minimum period of two years in oak is the same for both Brunello and Brunello Riserva. In reality the wine benefits from a little extra time in oak thanks to the quality of the raw materials. Rudi’s Riserva spends 36 months in French oak (mainly tonneaux (500ltr) and some barrique (225ltr)).\u003c\/p\u003e\n\u003cp\u003eThe grapes are picked by hand and transported the short distance to the winery in shallow trays. Fermentation is in large, open oak casks with a regular punching down of the cap. Fossati is on the western side of La Morra, it has a deserved reputation for long-lived wines with finesse as well as weight, a very different beast to its neighbour, Sarmassa (in the commune of Barolo).  Bricco Rocca is a little lower, where the aspect of the slopes provides the vines with excellent exposure to the sun, producing wines with finesse and balance, softer and more floral in style.  The soils in both crus (plots) are similar: lowish sand (25%), highish levels of clay (39%), iron levels are high in Fossati.\u003c\/p\u003e\n\u003cp\u003e2017 is a much misunderstood vintage, it was very hot and dry, but the previous year wasn’t and reserves of water were good.  The vines showed no stress, the berries were a little smaller, it was a very good vintage.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e2013 produced a number of challenges: the spring was cold and wet and summer started late, this meant the fruit set was late and not as generous as usual. Change has been dramatic in recent years, but not at Le Miccine where the vineyards remain as they have been for generations and cellar equipment has changed little. What has changed is the technical knowledge introduced by Paola which has led to subtle changes in the way things are done.\u003cbr\u003eThe vineyards are worked by hand, the vines are spur trained and great attention is paid to canopy management and airflow as ripeness is not guaranteed at this altitude. \u003cbr\u003eIn 2016 the grapes for the Chianti Classico were picked early in the morning, following a cold night where the temperatures had dropped to 2°C. This meant that the must (unfermented juice) went through a natural cold soak for two days while the temperature picked up enough for fermentation to begin. At that point the grapes were crushed and fermented in temperature-controlled steel tanks, lasting just over a week. The wine spent a little longer on the skins before being racked off and matured in a combination of large and small barrels.
