A high, rocky vineyard, surrounded by woodland that is now more than 10 years old. The soils are chalky and rich in marine fossils. The clone of Primitivo is a biotype that is well adapted to the local windy conditions. It is thought to have been developed in the C17th by a monk in Gioia del Colle.
The grapes are hand-picked in the second week of September, yielding 8 tons per hectare, minuscule for Puglia. The fermentation is in temperature-controlled steel tanks using wild yeasts*, the wine is then pressed out and aged for a year in steel tanks.
