Favaro. Erbaluce di Caluso 'Le Chiusure'
Erbaluce di Caluso DOCG.
White peach, elder and blackberry, perhaps tomato-leaf on the nose which follows through into a gloriously concentrated, precise palate of peach, apricot and spice. Mineral and fine; the greatest vintage yet.
Le Chiusure is just over a hectare of south facing vineyard. It is on stony moraine soils at an altitude of three hundred and fifty metres. The grapes are picked by hand, de-stemmed and pressed softly, the must is then macerated for just over a day and cold stabilised. The fermentation is carried out with inoculated yeasts in temperature-constolled tanks at eighteen degrees. The wine matures on the lees in large barrels until April, when it is bottled and cellared for at least a month before being released.
