Sara was quick off the blocks to spot the potential of Nebbiolo as a top ingredient for high quality sparkling wine and what’s more, she has put her faith in ‘the traditional method’ and allowed some skin contact, this has both lightly coloured and delicately flavoured the wine.
The grapes are selected from across the vineyards used for Barolo and Langhe Nebbiolo, they are picked by hand at the earliest opportunity. To make quality sparkling wines, acidity is more important than sugar and phenolic ripeness, thus, much of the raw material for this wine is effectively picked as a late green harvest for the Barolo. The wine spends a few hours on the skins before being decanted to complete a temperature controlled fermentation and does not go through a malolactic conversion. It is then bottled with a low dosage and remains on the lees developing the spumante for three years before disgorgement.
