The final wine of the 2018 Cuvée is 74% Pinot Noir and 26% Chardonnay: 60% from the 2015 harvest and the remainder from 2014.
The wine went into bottle in January 2016 with an eight gram dosage. Production 13,000 bottles
Delicate dried apricot, ripe apple and berry aromas, rich golden fruit. A lovely refreshing minerality, very pure crystalline, aromatic qualities. 12%
Whilst Mathieu is a passionate advocate for Pinot Meunier, there is no doubting the qualities of his Pinot Noir and Chardonnay - and the warming summers have brought another dimension to these varietals which is ably demonstrated by this wine.
This is fine, contemporary artisan Champagne; the vineyards are worked by hand and the grapes are sorted before being basket-pressed for fermentation in gravity fed, temperature-controlled stainless steel tanks.
The final say in the assemblage is Mathieu’s, though the tasting is an inclusive family affair with clients and various oenophiles present.
The ageing before disgorgement depends on the needs of the cuvée.
