Vigna del Cuc is a south facing vineyard that is home to a few hectares of old glera (balbi) vines whose limited production is reserved exclusively for this wine. It is made using a technique called 'Charmat lungo', where the wine rests on the skins for an extended period to maximise the flavours and the second 'spumante' fermentation is unhurried, this encourage a silky smooth moose and supremely elegant fruit. Brut is the rarest, driest and most difficult style the achieve from the Prosecco vine, fortunately Lionello has been a master for as long as I can remember, finely honing this long standing house favourite over many, many years, it is the little black dress of Spumante - never out of style and always elegant.

This Cuc is the same excellent brut prosecco that we have adored since 1996, but now it is Col Sandago instead of Case Bianche (Col Sandago has always been the premium range for Case Bianche). It also now comes in an extremely cool, textured, new-look bottle.
