A pink hue.  Strawberry and dark skinned berry fruit, a touch of clove and cinnamon on the nose. Lovely creamy texture, pure raspberry and forest fruit, a twist of bitter candied lemon on the finish. 12.5%

Puglia has a long history of making Rosé wines, usually from Negroamaro, though it is possible to find Primitivo, Susumaniello and Nero di Troia being used.  This is a particularly rare wine; a pure Nero di Troia, from a single north-facing vineyard that was planted between 1998 and 2002.  The vines are on light coloured clay topsoils which barely cover the limestone escarpment looking out to the Gargano peninsula. 

2022 was fiercely hot, forcing Paolo to pick early to preserve the acidity, and catch the sugars before they raced away.  The grapes were pressed, the juice given no time on the skins.  Most of the wine was fermented at 30°C in steel tanks, a small part was fermented in used barriques, all with selected yeasts.
