Saffirio. Langhe Nebbiolo
Langhe Nebbiolo DOC
An extraordinary vintage, old English rose, redcurrant, even lychee on the nose. Modest colour, beautiful ripe, velvety tannins, harmonious ripe raspberry and bramble. Inviting, pure and complex, exceptional. 14%
The vineyard is in the commune of Castelletto, a subzone of the Barolo DOCG area. The soils are known locally as ‘Elveziano’, maritime deposits with limestone, clay and sand, where vines benefit from the excellent drainage and rich nutrients. Sara has a clear idea of what her Langhe Nebbiolo should be, it is not a wine to languish for decades like a Barolo, it is made to be enjoyed from the moment it is released, but has the structure to develop.
The grapes are picked by hand and held at low temperatures for a day and a half before fermentation, this helps maintain the aromatic elements and the colour. The grapes are then de-stemmed and fermented at between thirty and thirty-two degrees in steel tanks for around ten days, the wine is then moved to thirty hectolitre ‘botti’ for a year where malolactic conversion occurs.
