Righetti. Parzialmente Passite 'Primo Appuntamento'
Grapes Corvina, Corvenone, Cabernet, Merlot
A partial appassimento where the grapes are dried for a month in shallow wooden crates before being pressed at the end of October. The wine is fermented in temperature controlled steel tanks and low temperatures for around ten days, the idea being to preserve the floral elements within the vines. The wine is then aged in large cask (50 hectolitre botti) for between ten and twelve months. The wine has a foot in the past though the addition of Cabernet and Merlot, short appassimento and cool fermentation adds some real freshness and a modern take on old formula.
