2020. Apricot, apple, peach, lavender and spring flower aromas.  Richly textured floral and citrus fruit, with almond and crusty bread flavours, lovely complex salt, sage  and vanilla nuance, a beautifully balanced, vibrant wine.  13%

The Erbaluce is grown on Valdostana pergolas that cling to the slopes of Croix Corma, in the hamlets of Donnas and Pont. St. Martin.  The vines are at a density of 3000 plants per hectare, a largely irrelevant fact in this extreme situation as the yield is only around 5 tons per hectare.  Every part of the viticulture is manual, the work is the very definition of extreme winemaking, no machines are possible.  The grapes are picked in the second half of October, cold soaked* for 7 days before a spontaneous fermentation* in French oak barriques*, followed by a year in the same barrels where it goes through a full malolactic conversion*.
