Grapes: Malvasia, Trebbiano, Bianca Fernanda, Moscato
Jasmine and tangerine on the nose, salt, white pepper and floral fleshy apple and elderflower fruit. Lightly sparkling, bone dry and totally delicious 11%
This is a field blend of white grapes from vines that are now at least 45 years old, planted at a low density (around 3000 plants per hectare) using a Veronese arch system.
Farmed biodynamically since 2011, the vineyard is on a gentle slope with woodland above.
The soils are moraine formed by the glacier that created Lake Garda. The bedrock is limestone that is rich in fossils.
The grapes are picked by hand and pressed immediately. The first fermentation is spontaneous, partially in amphora and partially in steel tanks. The second fermentation is in bottle and powered by wild yeasts and the must from the dried Cabernet Franc.
There is no remuage, this is a PETNAT (Pétillant Naturel) where the yeast remains in the bottle, the sediment can be allowed to settle or be disturbed, your choice! (both are lovely).
