As it turns out, there are two grape varieties in Umbria called Grechetto and they are not clones, they are not even related… Grechetto di Orvieto is a member of the Trebbiano family (Ugni Blanc, Arien etc…) and Grechetto di Todi (aka: Grechetto Gentile and Rébola in Emilia Romagna, Pallagrello di Caserta in Campania, and Occhietto and Stozzavolpe in the Marche) is a distinct grape variety. It is now championed by a new generation of winemakers in Umbria who have recognised its quality, it looks set to rise out of obscurity.
The vineyard is Guyot-trained, at a density of 6500 vines per hectare. Experience with low yields were unsuccessful, this style is best around 95 hl/ha*. The vines are hand-picked in the first week of September, de-stemmed, gently pressed and given a cold soak* before a temperature-controlled fermentation in steel tanks.
