The Agapane is the signature wine of Faniel, named from the Greek word: ‘agape’, which translates as ‘unconditional love’; a romantic name for a wonderful, fresh Champagne.
It is a Blanc de Noir made from Pinot Meunier with some Pinot Noir. The plots within the vineyard are harvested separately by hand.
The grapes are pressed in a basket press at ground level where gravity allows the free-run juice from the initial, lightest part of the pressing to flow into underground steel tanks (with temperature control) where it is fermented using selected yeasts.
Each tank represents a part of Mathieu’s vineyard and the cuvée is made from a blend of well-matched wines, the balance of which is openly declared.
Ageing is according to the requirements of the wine, Mathieu keeps few secrets and declares this information too.
