The wine is made from the local grape, Erbaluce, grown on the tiny south-facing Vigna Cavaina vineyard (1/3rd ha) which lies at an altitude of four hundred meters.
The soils are moraine with a high proportion of stones, the vines are trained using a traditional Trentino Pergola system.
Harvest takes place between the 15th and 25th of September, only hand selected fruit is used for this wine, transported the short distance to the winery in small boxes. During this time the wine remains on the lees. After a soft pressing. the must is given just over a day of cold maceration, then half the juice is racked off into a concrete ‰Û÷egg' lined with an inert resin. Fermentation is with selected yeasts and the wine goes through a full malolactic conversion.
The name of the wine simply comes from the time that it spends in the ‰Û÷egg' vat: thirteen months. Good ageing potential.
