2018 - A lithe, sinewy and powerful wine.  It is wonderfully fragrant, with aromas of lime, white peach, and apricot. The terroir of Etna is unmistakable on the palate, adding stone, flint and salt, as piercing and intense as ice-cold spring water.

Costanzo’s Mofete was in the last case, while this wine may be from the same vintage, it is a very different wine; I suspect the future of Etna is world-class white wines.
This Cru (section of the vineyard) is north facing at an altitude of between 700-750m. Soils are seventy percent black with brown volcanic sands, that are rich in organic matter. The vines are traditionally trained using a goblet (bush) system and where needed, the vine is supported with a chestnut pole. These plants are between thirty and one hundred years old, each yields around seven hundred grams of fruit.
The harvest must be manual due to the steep terrain and the grapes are selected both in the vineyard and then on a sorting table before pressing. Fermentation is in temperature-controlled steel tanks at eighteen degrees using selected, indigenous yeasts. The wine is aged in steel tanks for 12 months on the fine lees and then kept for at least 8 months in bottle before its release.
