At the end of January the grapes are crushed and fermented, they will have lost 40% of their volume during the drying period and undergone a transformation that ensures the unique bouquet and concentration of flavours. After fermentation the wine is aged for 3 years in a new 3000 litre French oak barrel, the result is stratospheric and the production is just 3000 litres a year. \u003cbr\u003eFor my taste, this is a substitute for port and is perfect after a meal with almonds and dried figs. The fermentation takes a relatively short ten days after which the wine is transferred into a steel tank until it has gone through malolactic fermentation. The wine is then clarified using only gravity and patience. The most famous (and usually the best) Teroldego is grown on the Rotaliano plain where it is protected by DOC status. Ternet is grown on a steep, southwest facing vineyard high above the valley floor at 450m. It is not bound by DOC regulations and is a genuine exploration into the potential of Teroldego, it is worlds apart from Zeni’s other wines, which is why even the name is different.\u003cbr\u003eThe vineyard was planted in 2004 using a Guyot training system that runs up and down the slope, roughly 5500 vines per hectare.
